This recipe appeared in Food is Life in our Winter 2023 issue.

  • 1 dozen eggs
  • 3 cups cream
  • 1 loaf of crusty bread, cubed
  • 1 pound Italian sausage
  • 1 onion, diced
  • 6 cloves garlic, chopped
  • 1 red pepper, diced
  • 1 pound spinach
  • 1 stick butter
  • 1 pound shredded fontina cheese
  • 1/2 cup shredded sharp provolone
  1. Grease a 9”x11” casserole dish.

  2. In a sauté pan, cook the sausage, crumble, and dry. Reserve.

  3. Melt the butter and sweat garlic, onions, and peppers. Add the spinach and cook until the spinach shrinks. Add the sausage and cook the mixture for 3 minutes. Cool slightly.

  4. In a separate bowl, whisk together the eggs and cream. Set them aside for the next step.

  5. In the greased casserole dish, layer the bread, sausage mix, and cheese. Repeat layering until all ingredients are used. Pour the egg mixture over the top and refrigerate the dish overnight.

  6. In the morning, bake at 350° for 70 minutes until set. Enjoy!
