Potato Latkes

  • 1 1/2 pound potatoes, peeled
  • 1 onion
  • 1 tablespoon baking powder
  • Kosher salt to taste
  • 3 eggs
  • 1/4 cup flour
  • oil for frying
  1. Grate potatoes and onion. Squeeze in a tea towel to remove excess moisture.

  2. Mix in egg, salt, and pepper. Add baking powder and flour. 

  3. In a cast iron skillet, heat oil to 350° (use enough oil to come up halfway). When the oil is hot, drop potato mix by spoonful. 

  4. Cook for 3-4 minutes per side until golden brown. Serve immediately with sour cream and applesauce.
