Quick Seafood Stew

With this quick stew, the seafood ingredients are interchangeable so use what you like! This recipe appears in One-Pot Meals from our Fall 2023 issue.

  • 1 pound mussels
  • 1 pound fish, cubed - swordfish, halibut, cod; cook's choice
  • 5 Roma tomatoes, quartered
  • 8 ounces crab meat
  • 8 ounces octopus or shrimp
  • 6 cloves garlic, minced
  • 1 teaspoon thyme
  • 1/2 cup white wine
  • 1 bunch parsley, chopped
  • 1/2 onion, diced
  • 1/2 cup olive oil
  • 1 quart water or fish stock
  1. Heat oil in a pot and sweat onions. Add garlic. Cook until soft but do not brown. 

  2. Add fish and sauté for 3-5 minutes. Add tomatoes. Add thyme and deglaze with wine. 

  3. Add mussels, octopus, or other shellfish. Add water and cover the pot. Simmer for 20 minutes. 

  4. Add crab and parsley and enjoy.
