Succotash 2024
Ingredients
- 4 ear worth corn kernels (approx. 3 cups)
- 4 strips bacon, diced
- 1 onion, minced
- 2 cups Lima beans
- 1 tomato, diced
- 2 tbsp minced garlic
- 4 tbsp butter
- 1 tsp chopped thyme
- Salt and pepper
Instructions
- Cook bacon in a pan until slightly crispy.
- Add butter, onions, and garlic. Cook for 5 minutes.
- Add corn and lima beans. Season with salt, pepper, and thyme.
- Add tomatoes, cook until beans are tender, and enjoy.
