Fried Flounder Sandwich

Gather these ingredients
For the fish
4
medium
flounder fillets
4
eggs
whisked with ΒΌ cup water or milk
1
cup
flour with salt and pepper
you can use gluten-free flour cup for cup and gluten-free panko
2
cups
panko with parsley
1
tsp
thyme
zest of 1 lemon
White bread for serving
For the aioli
1
cup
mayonnaise
1
half
sour pickle, chopped
1
pinch
granulated garlic
1
Tbsp
chopped capers
1
Tbsp
lemon juice
Instructions
Combine panko with the thyme and lemon zest.
Bread flounder by dredging in flour, then egg wash, then panko.
Fry at 350 degrees for 3-5 minutes per side. Drain on a paper towel.
To make the aioli, whisk all the ingredients together and chill.
Serve the flounder on white bread with aioli and enjoy.
