Oyster Dressing

Ingredients
  

  • 2 pt oysters
  • 1 onion, diced
  • 4 stalks of celery, diced
  • 1 tbsp chopped fresh sage
  • 2 tsp chopped fresh thyme
  • 3 clove garlic, minced
  • 1 loaf day-old ciabatta bread cut into cubes
  • 3 eggs
  • 1 cup clam juice
  • salt and pepper
  • 1 stick butter

Instructions
 

  • Melt the butter in a skillet. Sweat onions, celery, and garlic until soft. 
  • Add herbs and oysters. Let cool slightly.
  • Fold in bread and clam juice and mix well. 
  • Beat the eggs and add to the mix. 
  • Bake in a greased casserole dish at 350° for 25 minutes.
