Quick Seafood Stew

Ingredients
  

  • 1 lb mussels
  • 1 lb fish, cubed - swordfish, halibut, cod; cook's choice
  • 5 Roma tomatoes, quartered
  • 8 oz crab meat
  • 8 oz octopus or shrimp
  • 6 clove garlic, minced
  • 1 tsp thyme
  • 1/2 cup white wine
  • 1 bunch parsley, chopped
  • 1/2 onion, diced
  • 1/2 cup olive oil
  • 1 qt water or fish stock

Instructions
 

  • Heat oil in a pot and sweat onions. Add garlic. Cook until soft but do not brown. 
  • Add fish and sauté for 3-5 minutes. Add tomatoes. Add thyme and deglaze with wine. 
  • Add mussels, octopus, or other shellfish. Add water and cover the pot. Simmer for 20 minutes. 
  • Add crab and parsley and enjoy.
