Preheat the oven to 400. Roast corn in husk for 15 minutes. Cool slightly, then cut corn from the cob. Place in a bowl and add thyme, parsley, honey, and vinegar. Mix well and season with salt and pepper.
Slice baguette ¼-inch thick on bias. Brush with oil and season with salt and pepper. Broil on a cookie sheet for 3 minutes; turn and repeat. Arrange bread, spread with goat cheese, top with corn—serve and enjoy.
