Fried Flounder Sandwich
Gather these ingredients
For the fish
- 4 medium flounder fillets
- 4 eggs whisked with ¼ cup water or milk
- 1 cup flour with salt and pepper you can use gluten-free flour cup for cup and gluten-free panko
- 2 cups panko with parsley
- 1 tsp thyme
- zest of 1 lemon
- White bread for serving
For the aioli
- 1 cup mayonnaise
- 1 half sour pickle, chopped
- 1 pinch granulated garlic
- 1 Tbsp chopped capers
- 1 Tbsp lemon juice
Instructions
- Combine panko with the thyme and lemon zest.
- Bread flounder by dredging in flour, then egg wash, then panko.
- Fry at 350 degrees for 3-5 minutes per side. Drain on a paper towel.
- To make the aioli, whisk all the ingredients together and chill.
- Serve the flounder on white bread with aioli and enjoy.
