Bibb or butter lettuce is another soft green with a sweet clover-like flavor profile. Its light texture is good for layering, and a small amount can appear larger than it is – great for presentation. This recipe is from our Early Summer 2023 issue.

Avocado and Bacon Bibb Salad with Chipotle Ranch Dressing

Gather these ingredients  

Salad

• 8 slice bacon, cooked and chopped
• 2 whole avocados, sliced
• 1 whole head of iceberg lettuce, quartered
• 1 pt grape tomatoes, sliced
• 1 cup crumbled queso fresco cheese

Dressing

• 1 cup mayonnaise
• 1/2 cup sour cream
• 1/3 cup buttermilk
• 1 tbsp chopped dill
• 1 tbsp chopped thyme
• 1 can chipotles in adobo a small can
• 6 clove garlic
• 2 tsp granulated garlic
• 1 tsp pepper
• 2 whole limes, both the juice and zest

Instructions 

• Combine dressing ingredients in a blender, blend until smooth. 
• Place wedge on plate; garnish with tomato, avocado, bacon, and cheese.
• Serve with chipotle ranch dressing.
