Blue Cheese Bacon Potato Salad

Blue Cheese Bacon Potato Salad
Gather these ingredients
- 2 ½ lbs. red potatoes cooked whole, cooled
- 10 slices of bacon cooked cooled, and diced
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 Tbsp. apple cider vinegar
- ½ tsp. salt
- ¼ tsp. black pepper
- 4 green onions chopped
- 3 oz. blue cheese crumbled (about 3/4 cup)
Instructions
- In a bowl mix mayonnaise, sour cream, cider vinegar, salt and pepper and whisk until smooth.
- Chop potatoes into ½ inch cubes and add to dressing.
- Fold in remaining ingredients and adjust seasoning to taste.
- Chill for 1 hour, then serve.
