Marinated Skirt Steak
This recipe appeared in Prime Cuts: My Beef with Steaks in our Early Summer 2025 issue.

Marinated Skirt Steak
Gather these ingredients
- 4 8-10 oz. skirt steaks
- 4 cloves minced garlic
- 3 Tbsp. olive oil
- 1 Tbsp. ground coffee
- 3 Tbsp. brown sugar
- 2 cans of chipotle peppers
- 2 Tbsp. ancho Chile powder
Instructions
- Mix all ingredients and spread rub over steaks. Refrigerate overnight.
- Remove from fridge, let stand at room temp for 20 minutes, then grill over medium high heat 4-5 minutes per side.
- Let steaks rest for 5 minutes. Slice across the grain and serve.
