Quick Seafood Stew
With this quick stew, the seafood ingredients are interchangeable so use what you like! This recipe appears in One-Pot Meals from our Fall 2023 issue.

Quick Seafood Stew
Ingredients
- 1 lb mussels
- 1 lb fish, cubed – swordfish, halibut, cod; cook’s choice
- 5 Roma tomatoes, quartered
- 8 oz crab meat
- 8 oz octopus or shrimp
- 6 clove garlic, minced
- 1 tsp thyme
- 1/2 cup white wine
- 1 bunch parsley, chopped
- 1/2 onion, diced
- 1/2 cup olive oil
- 1 qt water or fish stock
Instructions
- Heat oil in a pot and sweat onions. Add garlic. Cook until soft but do not brown.
- Add fish and sauté for 3-5 minutes. Add tomatoes. Add thyme and deglaze with wine.
- Add mussels, octopus, or other shellfish. Add water and cover the pot. Simmer for 20 minutes.
- Add crab and parsley and enjoy.
