Roasted Corn Bruschetta

Roasted Corn Bruschetta
Gather these ingredients
- 4 ears fresh corn
- 1 Tbsp. honey
- 2 tsp. chopped thyme
- 1 Tbsp. chopped parsley
- 1 Tbsp. champagne vinegar
- Salt
- Pepper
- 1 baguette
- ¼ cup olive oil
- 8 oz goat cheese
Instructions
- Preheat the oven to 400. Roast corn in husk for 15 minutes. Cool slightly, then cut corn from the cob. Place in a bowl and add thyme, parsley, honey, and vinegar. Mix well and season with salt and pepper.
- Slice baguette ¼-inch thick on bias. Brush with oil and season with salt and pepper. Broil on a cookie sheet for 3 minutes; turn and repeat. Arrange bread, spread with goat cheese, top with corn—serve and enjoy.
