Roasted Garlic Tomato Soup
Gather these ingredients
- 1 qt. whole peeled tomatoes canned
- 12 cloves roasted garlic
- 1 cup cream
- Salt and pepper to taste
- 2 Tbsp. olive oil
- 6 basil leaves
Instructions
- Heat oil in a soup pot. Add garlic and sweat for 2 minutes.
- Add the tomatoes and simmer for 5 minutes.
- Add the cream and basil and purée with an immersion blender. Reduce heat. Season with salt and pepper to taste.

Serve with Grilled Bacon and Bleu Cheese
