Spaghetti Squash Caprese
Ingredients
Spaghetti squash
- 1 spaghetti squash split lengthwise and seeded
Caprese
- 1/4 cup Extra virgin olive oil
- 2 tbsp Minced garlic
- 1/4 cup chiffonade basil
- 2 tomatoes, diced
- 4 oz ciliegine mozzarella
- 4 cup cooked spaghetti squash
Instructions
Make the spaghetti squash
- Heat oven to 350. Brush spaghetti squash with oil and season with salt and pepper. Place cut side down on a baking sheet. Roast for 30 minutes; let cool for 15 minutes. Using a spoon loosen the squash from the skin and fluff to separate strands.Use in your favorite pasta recipes.
Make the caprese
- Heat oil in a sauté pan. Sweat garlic until soft. Add spaghetti squash; add more oil if desired. Toss with tomatoes, basil, and cheese. Warm through and enjoy.
